Yum. Lunch II - Homemade Chicken Burgers


Actually, these aren't really burgers as such as 'burger' to me implied minced meat and stuff mixed in with it.  Let's just call this a glorified chicken sandwich.

What you need:
5 chicken fillets
olive oil
smoked paprika
juice of 1 lemon
1 little jem lettuce
garlic (or if you're me - garlic puree)
mayonaise
breadrolls/bagels/ciabatta or burger buns in our case as we had none of the other stuff.

How to:
Place chicken fillets on a board and, using the best knife you have, cut in half horizontally.  This gives you two thinner fillets with each fillet sliced.
Lay cling film on work surface and place chicken fillets on top.  Cover with another layer of clingfilm and bash to thin out.  I used a rolling pin.  Some people have the proper tools and would use a meat tenderiser.  I understand a tin of beans rolled across cling film works equally well lol.  You don't want to be able to see through them but just to thin them enough that they cool in a few minutes each side.
In a bowl, place your chicken, lemon juice, olive oil and mix for a bit, enough to coat chicken.  I then sprinkled, liberally 'cos the lid fell off, paprika all over the chiken.
Remove and place on either a hot griddle pan or the barbeque.  Keep an eye on it as it cooks quickly, turn over after approx. two minutes and cook other side.

To assemble.
Put about 4 tbsp mayo into a bowl and add either one minced clove of garlic or a good squeeze of the paste.  Mix together and heyho you've got garlic mayo.
Spread bread of your choice with mayo, add some lettuce and the chicken.  Top with 'lid' of bread and enjoy.  Yummmmmm.  I find that vine plum tomatoes are delicious with this.
