Making Whoopie (Pies)

Decided, 'cos they keep cropping up everywhere in blogs/news/foodie mags that I'd make these.  Can't say I'm a huge fan.  There is too much (can't believe I typed that) of a chocolate hit for me.  Plus marshmallow v. sweet.  However, as you can see from pics.  The kids loved them.

What you need:

125g butter
150g chocolate (70% min)
225g caster sugar
3 eggs
1 tsp vanilla extract
225g  plain flour.
75g cocoa powder, plus some extra for dusting.
.5 tsp baking powder
18 white marshmallows
Icing sugar for dusting

What you've got to do:

Heat the oven to 180c/160fan/gas 4.  Line 3 baking sheets with non-stick baking parchment.  Melt thebutter and chocolate in a bowl over a pan of simmering water.  In a  large jug whisk the caster sugar, eggs and vanilla extract together.  In a bowl, sift together the flour, cocoa and baking powder.  Poour the egg mix into the melted chocolate and using a large metal spoon, quickly and carefully fold in.  Next, fold in the flour and cocoa mix.
Spoon 36 tablespoon-size (measuring spoon not serving spoon) dollops of the mix onto the baking sheets, spaced apart.  (Allow room for them to spread a little.)  Bake for 6 mins or until beginning to firm up.  Take out and leave to cool for 2 minutes.  Set 18 aside, then flip the remaining whoopies over and sit a marshmallow on top of each.  Return these to the oven for 2-3 minutes or until marshmallows are beginning to soften.  Leave to cool for a few minutes before sandwiching together with the other whoopies.  Dust with cocoa and icing sugar.  OR!!!!  Really go hell for leather and coat each whoopie with chocolate!
