Gorgeous Tuna Mayonaise

Am on a get fit / get thin buzz at the moment.  Actually, at this moment I should be at a kick boxing class but am so wound up I am liable to cry if someone actually does kick me.  In the past week I have managed to lose 2.2kg which is close to 5lbs I think (if you're in your thirties like me and don't give a shit about kgs but think in stone and pounds)

Anyway, I attribute some of that weight loss to this sandwich filling (protein heavy and delicious).

You need:
2 standard tins of tuna in brine.  1 scallion (showing my age again - SPRING ONION ).  60ml light mayo and 1 tablespoon of Djion mustard.  Enough cheese to be nice but not so much as to fatten this up.
Slice onion, drain tuna and mix everything together.  Lovely on a tortilla and grilled on frying pan.  You'll get approx. 5 sambos out of this.  Less if your husband smells it in the frides.  Not cos he'll throw it out, more a case of he'll mill it.
